{"id":271,"date":"2022-03-22T04:07:08","date_gmt":"2022-03-22T04:07:08","guid":{"rendered":"https:\/\/ruthmayne.com\/blog\/?p=271"},"modified":"2022-03-22T05:19:57","modified_gmt":"2022-03-22T05:19:57","slug":"homemade-mayo","status":"publish","type":"post","link":"https:\/\/ruthmayne.com\/blog\/homemade-mayo\/","title":{"rendered":"Homemade Mayo!"},"content":{"rendered":"\n<figure class=\"wp-block-image size-large is-resized\"><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-side-view-1-768x1024.jpg\" alt=\"\" class=\"wp-image-272\" width=\"643\" height=\"857\" srcset=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-side-view-1-768x1024.jpg 768w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-side-view-1-225x300.jpg 225w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-side-view-1-1152x1536.jpg 1152w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-side-view-1.jpg 1536w\" sizes=\"(max-width: 643px) 100vw, 643px\" \/><\/figure>\n\n\n\n<p>Homemade Mayo is simple, takes only a few moments, save you money, puts you in control of the ingredients, tastes great, can be made in small or big batches, has NO preservatives, tastes great!<\/p>\n\n\n\n<p>You only need a few ingredients and tools to make homemade mayo<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Blender- must have a removable lid or at least the removable cap within the lid<\/li><li>Rubber spatula<\/li><li>clean, disinfected storage container ( I use a glass jar)<\/li><\/ul>\n\n\n\n<p>And now lets get to the actual ingredients and the HOW TO!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/fresh-eggs-1024x819.png\" alt=\"\" class=\"wp-image-273\" width=\"499\" height=\"398\" srcset=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/fresh-eggs-1024x819.png 1024w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/fresh-eggs-300x240.png 300w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/fresh-eggs-768x614.png 768w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/fresh-eggs-1536x1229.png 1536w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/fresh-eggs.png 2000w\" sizes=\"(max-width: 499px) 100vw, 499px\" \/><\/figure>\n\n\n\n<ul class=\"wp-block-list\"><li>2 eggs, the fresher the better! yes you will use the whole egg<\/li><li>1\/2-1t dry mustard powder ( I buy organic)<\/li><li>1t salt: I use grey but you can use white or pink it must be fine ground<\/li><li>1\/8C white vinegar (this is optional, I have done it both ways with great success)<\/li><li>1t cane sugar (I use stevia) any type of sweetener is fully optional<\/li><li>1.5-2C light olive oil (DO NOT use extra virgin olive oil, use the light colored) You could also use other types of oils, such as avacado, vegetable. but I prefer the olive oil<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions for making your mayo!<\/h2>\n\n\n\n<p>Okay, Now comes the fun part!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/Untitled-design-1024x819.png\" alt=\"\" class=\"wp-image-274\" width=\"498\" height=\"397\" srcset=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/Untitled-design-1024x819.png 1024w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/Untitled-design-300x240.png 300w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/Untitled-design-768x614.png 768w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/Untitled-design-1536x1229.png 1536w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/Untitled-design.png 2000w\" sizes=\"(max-width: 498px) 100vw, 498px\" \/><\/figure>\n\n\n\n<p>Put the eggs, mustard powder, salt, vinegar (if using) into the blender and blend for approx 20-30 seconds till mixed well with blender on low.<\/p>\n\n\n\n<p>KEEP THE BLENDER ON LOW, ***SLOWLY*** very very slowly, start pouring in the olive oil, it should be pouring in a continuous stream the side of a string.. This is where you must show patience! The steadier and slower the pouring of oil, the better it will emulsify (thicken)<\/p>\n\n\n\n<p>Because I use fresh eggs right from our chickens my mayo is never white. I also use organic light mustard powder. The color of your mayo will vary depending on the ingredients used.<\/p>\n\n\n\n<p>As you are finishing pouring in the oil, allow the blender to run another 10-15 seconds, you may have to turn up the speed on the blender at this point as its thicker.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-top-view-768x1024.jpg\" alt=\"\" class=\"wp-image-275\" width=\"480\" height=\"640\" srcset=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-top-view-768x1024.jpg 768w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-top-view-225x300.jpg 225w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-top-view-1152x1536.jpg 1152w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2022\/03\/homemade-mayo-top-view.jpg 1536w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/figure>\n\n\n\n<p>Once you are finished, taste test to check flavor. then use a spatula to move to a storage container. Sometimes this can be tricky if your not using a wide mouth jar, I use a cake icing tube, spoon it into that, then push the plunger into the container, this way I do not have a huge mess, or waste alot of my mayo!
