This is my first attempt at anything &#8220;gluten free&#8221;!<\/h1>\n<p>What did I make? Well today, March 12, just happens to be my hubby&#8217;s 50th birthday! (Happy Birthday Joel!)<\/p>\n<p>I made a carrot cake! so let&#8217;s get right down to what I did!<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\" wp-image-332 aligncenter\" src=\"http:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/carrot-cake-300x225.jpg\" alt=\"\" width=\"336\" height=\"252\" srcset=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/carrot-cake-300x225.jpg 300w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/carrot-cake-768x576.jpg 768w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/carrot-cake.jpg 960w\" sizes=\"(max-width: 336px) 100vw, 336px\" \/><\/p>\n<p>It should be noted that I read so much about &#8220;Gluten Free&#8221; flour for MONTHS before I made my decision and purchased the blend I chose. I was a bit hesitant as everything I have tasted in the past that is gluten free tasted&#8230;..well&#8230;. like cardboard! Everything I read said the balance of ingredients is very important with gluten free products, so I thought, well, I can always feed it to the chickens!<\/p>\n<p>First let&#8217;s talk about the flour blend I chose. I learned thru research that with most gluten free baked goods, you need to add <span class=\"wprm-recipe-ingredient-name\">xanthan gum unless your flour already has it. When I chose my flour blend, I decided to go with &#8220;Namaste&#8221; gluten free perfect flour blend. It has tons of great reviews, and most of them said after trying many blends this flour held up the best, tasted the best and had a good mixture of ingredients that work well together. It also contains Xanthan gum, so that will be one less thing you need to have in your pantry!<\/span><\/p>\n<p><img decoding=\"async\" class=\"size-medium wp-image-333 aligncenter\" src=\"http:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/namaste-gluten-free-flout-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/namaste-gluten-free-flout-225x300.jpg 225w, https:\/\/ruthmayne.com\/blog\/wp-content\/uploads\/2023\/03\/namaste-gluten-free-flout.jpg 720w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>I put all my dry ingredients into my stand mixer and mixed for just about a min to make sure there were no chunks in my brown sugar, as I make my own brown sugar! You should too! it&#8217;s simple to do!<\/p>\n<p>Once I had that done, I added my room temp eggs, homemade vanilla extract and light olive oil (you need a more neutral oil for this), along with ACV and coconut milk (this cake is dairy free as well)<\/p>\n<p>I put all the liquid ingredients in with the dry and mixed on slow speed for a couple mins.<\/p>\n<p>I then took the bowl off the mixer and added my carrots, poured it into my 2 rounds that I had put parchment paper in. It is at this point you will want to add any nuts if you choose! then I baked them!<\/p>\n<p>WOW did this ever come out delish!! soft, moist and airy and tasty! I will say that next time <span style=\"color: #993300;\">(YES THERE WILL BE A NEXT TIME)<\/span> I will add extra cinnamon and nutmeg. Thru my research I learned that gluten free has to have a perfect balance, but in making this I know I can add the extra spices without causing a problem in the cake itself!<\/p>\n<p>For the frosting I used a recipe that I have had forever, I LOVE cream cheese frosting, but I do NOT like really sweet frosting! and this recipe is just awesome! it&#8217;s more of a buttercream cheese frosting than anything else!<\/p>\n<p>Would love to hear your feedback if you decide to make this cake! for me&#8230; I love it!<\/p>\n<h2>HERE IS THE RECIPE:<\/h2>\n<h3 class=\"wprm-recipe-header carrots)<\/span><\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-ingredient-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-ingredient-group-name wprm-block-text-uppercase-faded\">For the cream cheese frosting<\/h4>\n<ul class=\"wprm-recipe-ingredients\">\n<li class=\"wprm-recipe-ingredient\" data-uid=\"17\"><span class=\"wprm-recipe-ingredient-unit-system wprm-recipe-ingredient-unit-system-1\"><span class=\"wprm-recipe-ingredient-amount\">8<\/span> <span class=\"wprm-recipe-ingredient-unit\">ounces<\/span> <\/span> <span class=\"wprm-recipe-ingredient-name\">cream cheese<\/span> <span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">at room temperature<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"18\"><span class=\"wprm-recipe-ingredient-unit-system wprm-recipe-ingredient-unit-system-1\"><span class=\"wprm-recipe-ingredient-amount\">10<\/span> <span class=\"wprm-recipe-ingredient-unit\">tablespoons<\/span> <\/span><span class=\"wprm-recipe-ingredient-name\">unsalted butter<\/span> <span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\"> at room temperature<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"19\"><span class=\"wprm-recipe-ingredient-unit-system wprm-recipe-ingredient-unit-system-1\"><span class=\"wprm-recipe-ingredient-amount\">\u00bc<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <\/span> <span class=\"wprm-recipe-ingredient-name\">kosher salt<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"19\">3 to 4 <span class=\"wprm-recipe-ingredient-unit\">cups<\/span> powdered sugar (or to taste. I found you need at least 3 cups for consistency)<br \/>\n<h3><span class=\"wprm-recipe-ingredient-unit-system wprm-recipe-ingredient-unit-system-1\"><span class=\"wprm-recipe-ingredient-unit-system wprm-recipe-ingredient-unit-system-1\"><br \/>\n<\/span><\/span><strong>Instructions<\/strong><\/h3>\n<div class=\"wprm-recipe-instruction-group\">\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-43398-step-0-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Preheat your oven to 350\u00b0F. Grease two 8-inch round baking pans and set them aside. I lined with parchment paper<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-0-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">In a large bowl, place the flour, <span style=\"color: #993300;\">xanthan gum, if using<\/span>, baking soda, baking powder, salt, cinnamon, nutmeg and sugar of your choice, <span style=\"color: #993300;\">(if using stevia, make sure to get correct conversion measurment)<\/span> Whisk to combine well. Add the brown sugar, and whisk again to combine, and to break up any lumps in the brown sugar.<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-0-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add the oil, eggs, vinegar, and milk, and mix to combine. Add the (optional) pecans and mix until even<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-0-3\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add the grated carrots to the mixture and stir until evenly distributed throughout the batter. The batter will be thick, but relatively soft.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-uppercase-faded\">To make a cake (two rounds or 9&#215;13)<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-43398-step-1-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Divide the batter evenly among the two prepared baking pans and spread into an even layer in each. Or pour into baking dish.<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-1-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Place in the center of the preheated oven and bake until the cake is uniformly light brown on top and beginning to pull away from the sides of the pan (35 to 40 minutes). Use a toothpick or butter knife, it should come out clean when cake is done,<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-1-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Remove from the oven and allow to cool for at least 10 minutes before transferring to a wire rack to fully cool<\/div>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\" data-slot-rendered-recipe=\"true\"><\/div>\n<div class=\"mv-ad-box\" data-slotid=\"recipe_3_btf\">\n<div class=\"mv-rail-frame\" data-slotid=\"recipe_3_btf\">\n<div class=\"mv-rail-slide\" data-slotid=\"recipe_3_btf\">\n<div class=\"mv-rail-sticky\" data-slotid=\"recipe_3_btf\">\n<div id=\"recipe_3_btf_wrapper\" class=\"adunitwrapper recipe_btf_wrapper mv-empty-wrapper\" data-wrapper=\"recipe_3_btf\" data-nosnippet=\"\">\n<div id=\"recipe_3_btf\" class=\"adunit\">\n<div class=\"wprm-recipe-instruction-group\">\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-43398-step-3-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">While the cakes are cooling, in the bowl of your stand mixer, and using the paddle attachment (or a large bowl with a handheld mixer), place the cream cheese and butter.<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-3-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Beat on medium speed until light and fluffy, about 3-5 minutes.<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-3-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add the salt, and 3 cups of powdered sugar. Mix on low speed until the sugar is absorbed. Turn the mixer to med-high speed and beat until the frosting is thickened and fluffy. Taste to see if sweet enough, if you like it sweet you will need to add a bit more powdered sugar<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-3-3\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add more powdered sugar as necessary to thicken the frosting enough to hold its shape when scooped with a spoon.<\/div>\n<\/li>\n<li>Put the icing in the fridge for approx 10 mins to firm it up a bit for frosting the cake,<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\" data-slot-rendered-recipe=\"true\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-uppercase-faded\">To frost a layer cake.<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-43398-step-4-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Turn one of the cooled cakes, top down, onto a serving platter. Spoon about half of the frosting onto the top of the cake and spread into an even layer.<\/div>\n<\/li>\n<li id=\"wprm-recipe-43398-step-4-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Top with the second cake, top-down and press to adhere. Spread the remaining frosting on top of the cake and top with more chopped pecans, if desired.
