Creamy Cheesy Cauliflower Mash!

I have had people not be able to tell the difference when made correctly!! The word “correctly” is the place where lots of people, including myself, can get messed up! When I first started making this, I would follow recipes that had me boiling the cauliflower and I just could not get all the water out of it, so they were always runny, always had lumps of cauliflower and I just could not get the texture just right… That was until one day I had a great idea! What is it you ask?

I decided to use my power pressure cooker! I placed the caulflower into the basket, on a rack with 1.5 cups of water BELOW THE CAULIFLOWER! so it gets cooked, but not in water! What if you do not have a Power pressure cooker, or an insta pot.. simple! get one of your big pots, a round rack or something to keep the cauliflower out of the water, so you are essentially going to steam it.

What You Will Need

  1. Gather everything you need, here is a more comprehensive list: Cauliflower, Cream cheese, Pepper, Garlic salt, Shredded cheddar cheese, Parmesan cheese. A hand mixer or stand mixer.
  2. Wash the cauliflower and take off all the green stems. In an insta pot, or a power pressure cooker, set it to 10 mins, I use the rice button and change time to 10 mins. put your cauliflower in the basket, on the rack with water in the bottom, put the lid on and 10 mins later, you have wonderfully cooked cauliflower! If doing this by the “steam” method on a stove top in a pot, I would keep checking it to make sure that, A. it does not run out of water and B. check the cauliflower for tenderness. *NOTE: you want the cauliflower very very very soft!
  3. Once the cauliflower is cooked, DO NOT let it cool! if using a hand mixer, you can leave it in the pot, if using a pressure cooker, move the cauliflower to your mixing bowl. Add the cream Cheese while the cauliflower is hot! It helps if you take the cream cheese out and let it get to room temperature. While the cream cheese and cauliflower are mixing, add pepper, and garlic salt. You want to make sure your cauliflower is mixed and smooth just like mashed potatoes.
  4. Once fully mixed, add the shredded cheese and hand mix in with a wooden spoon, then put it into a baking dish. Top with Parmesan cheese and put into the oven at 350 for 15-20 mins. Take out of the over and serve!
